1 chicken (3-4lbs) <-- I like to use free range =] A lot skinnier and healthier!
6 tsp of sea salt
6 tsp of fresh ground pepper
2 tsp of ground chili powder
4 tsp of garlic salt
1/3 onion (yellow = sweeter, purple = tangy)
4 tbs of oil (olive, canola, etc.)
1) Wash chicken and pat dry with paper towels. You don't want any water to be puddling in any part of the chicken!
2) I like to cut my chicken down the keel (center floppy bone of the chicken) and split the breast. Be careful of the sharp bones if you happen to break it.
3) After splitting the chicken, coat the inside of the chicken with 2 tbs of oil. Add 6 tsp of sea salt, 4 tsp of garlic salt, 6 tsp of ground pepper, and 2 tsp of ground chili powder into a bowl and mix it together. Now spread half of the mix evenly inside the chicken.
4) Now flip the chicken over and use the rest of the mix and spread it evenly! Make sure to get in between the chicken thighs and wings! Set the oven to "convection" and at 375 degrees F.
5) Flip the chicken back over and top with thinly sliced onions. The white onions give it a nice sweetness =].
6) Cook for 20 minutes on one side and flip over. Then cook another 20 minutes at convection and finally 3 minutes on broil. This will give it a nice golden brown color and crispy skin. Wah la! You're all finished with a simple chicken dish. You can serve with roasted vegetables and a nice glass of vino =].
